Our very first popsicles!
Since it’s summer and the days are getting hotter, we picked up this awesome popsicle mold at our local store. At first, they just seemed like regular molds with a weird stick attached to the side. Turns out, the stick is actually a straw for slurping the melted ice cream that gathers at the base! This amazing technology needed to be shared so we whipped up this super quick recipe to test them out.
We made a basic creamsicle- with heavy cream, almond milk, strawberries and nuts. This recipe can be altered to use different berries and nuts to your liking. We tried this with pistachios and cashews. The pistachios worked very well with the strawberries since they were roasted and salted- they provided a nice contrast with the sweet berries. The cashews were sadly overpowered and didn’t work at all. So pistachios it is!
We’re excited to create more flavors of popsicles in the upcoming weeks. A chocolate peanut butter one is definitely in the works.

You can use any of these amazing, low carb, homemade ice cream recipes in your popsicle molds. Or keep it simple and blend some berries and cream for a refreshing pick-me-up.

- 8 oz strawberries
- 2 oz salted pistachios
- 1/2 cup heavy cream
- 1/2 cup almond milk
- 2 doonks Stevia
- Place your popsicle molds in the freezer beforehand. This will help accelerate the freezing process.
- Blend the strawberries, Stevia, heavy cream and almond milk until fully combined. Let this blend for about a minute so the cream has a chance to aerate and whip.
- Then throw your pistachios into the mix, and stir, do not blend! You can also use walnuts, cashews or pecans!
- Pour the creamsicle mix into your cold popsicle molds and insert the bases. Freeze about 2 hours or until set.
- To remove the creamsicles, allow hot water to run against the outside of the popsicle molds. This will melt some of the ice cream that sticks the creamsicles to the molds. Then gently pull on the bases until your ice cream is out.
