Xanthan gum is a thickener in recipes which usually use gluten in the form of flour. It thickens and adds doughy-ness, allowing dishes to hold in air bubbles that you would find in cakes and breads.
Xanthan gum also creates a creamier texture when all your ingredients are encouraged to mix properly. And since a little goes a long way, be careful when adding to food! Use a little at a time and increase appropriately. Also, note that when adding it to hot dishes such as stews, as it keeps cooking, it will thicken much more. Keep an eye on it!
