Readers of Tasteaholics.com are always asking for more vegetarian options – well here’s a great one! Our friend, Hauke, from HurryTheFoodUp.com has decided to share this amazing Keto Grilled Tomato with Apricot Jam recipe with us and we can’t stop drooling over it. Meat or no meat, these sound like they will go deliciously at your next barbecue. The fresh flavors of tomato and the savory and salty cheese are perfect for the summer. Here’s the recipe from Hauke himself:
Grilled Tomatoes with Apricot Jam
At HurryTheFoodUp we work with various others when it comes to developing recipes. There are so many wonderfully skilled chefs and incredible cuisines out there we feel it would be silly to limit ourselves to just… ourselves.
These grilled tomatoes came about from a collaboration with the very talented Malcolm Riley – The African Chef. Malcolm’s passion for all food African and Indian is just breath-taking, and he’s a genius when it comes to jams, chutneys and sauces.

Hard cheese, watercress and apricot jam – this glitzy combo makes our grilled tomatoes a sweet and tangy fusion of fruit and veggie goodness. It’s all well and good to have recipes that look beautiful and sound great on paper (or indeed online) but if they’re impractical to make and barely serve a reason, we have to ask, what’s the point? So when we create and release new recipes, they all have to have one thing in common – they have to be useful.
A recipe’s usefulness can come in various guises. Whether it’s to help hit a particular nutritional goal – low carb or keto for example, or be quick and easy to make when you’re in a rush. It could also be something that’s great as a snack or to take to a barbecue or party. Or something that’s so simple you can easily memorize it and bang it out whenever you need something at the last minute. And if it’s all those and tastes awesome? Then you know you’ve got something special going on.
You know where we’re going with this – these grilled tomatoes are all of the above: quick, delicious, low carb and so easy to make – yet they taste deceptively like they weren’t. Perfect.
So fire up your oven, grab your tomatoes, and off you go. You’re just minutes away from a beautiful Afro-Indian blend.

- 6 medium tomatoes
- 3 tsp sugar-free apricot jam
- 2 tsp dried oregano
- 3.5 oz grated gouda cheese
- 1.5 oz watercress for garnish
- 1 tbsp olive oil
- salt to taste
- pepper to taste
- Pre-heat the oven to 180°C/360°F.
- Cut the tomatoes in half and place on a lightly greased baking tray.
- Spread a little bit of jam on each of the tomato slices.
- Then, sprinkle dried oregano on top.
- Grate the cheese over tomatoes and place in the oven for 25 minutes or until cheese is golden.
- Now garnish each slice with watercress.
- Drizzle with olive oil and finish with cracked black pepper.
- Enjoy!

I’ve never seen watercress that looked like that, is that baby watercress? what other substitutes could you use?
Any microgreens you like would work well here!
Is apricot the only flavor that works well for these? I have a tasty sugar free blackberry/raspberry jam. Wondering if the combo would work
