- 4 boneless chicken breasts about 6 ounces each
- 1/4 cup cream cheese
- 1 cup frozen spinach thawed and drained
- 2 strips bacon cooked and chopped
- Preheat the oven to 350°F and lightly grease a baking dish.
- Use a sharp knife to cut a slit in the side of each chicken breast – cut most of the way through but leave enough for it to hold together.
- Beat the cream cheese with a hand mixer until creamy then stir in the spinach and bacon.
- Spoon the mixture evenly into the chicken breasts and use a toothpick to keep them together.
- Place the chicken breasts in the baking dish and bake for 30 minutes or until the chicken is cooked through.
- Let the chicken rest for 5 minutes before serving.
