- 1 pound cooked shrimp (peeled and deveined)
- 1/4 cup fresh lime juice
- 1 teaspoon olive oil
- salt and pepper
- 1 medium avocado (pitted and diced)
- 1 small tomato (diced)
- 1/4 cup diced red onion
- 2 tablespoons fresh chopped cilantro
- 1 jalapeno (seeded and minced, optional)
- Chop the shrimp into bite-sized pieces.
- Whisk together the lime juice, olive oil, salt, and pepper in a bowl.
- Toss in the shrimp, avocado, tomato, red onion, cilantro, and jalapeno.
- When well combined, cover and chill until ready to serve.
