- 2 pounds London broil
- 1/2 cup unsweetened apple juice
- 2 tablespoons salt
- 2 teaspoons garlic powder
- 1 teaspoon black pepper
- 1 teaspoon ground allspice
- 1 teaspoon ground coriander
- 1 tablespoon red pepper flakes (optional)
- Slice the beef across the grain into very thin strips.
- Whisk together the apple juice, salt, red pepper flakes, garlic powder, pepper, allspice, and coriander in a small bowl.
- Place the sliced beef in a large zippered freezer bag and pour in the marinade.
- Shake well to coat then refrigerate at least 8 hours.
- Preheat the oven to 250°F.
- Line two baking sheets with parchment and spread the sliced beef on them in a single layer.
- Place the cookie sheets in the oven and let the beef dry for 6 hours.
- If they are not completely dry and dark in color, turn off the oven and let them dry overnight with the door closed.
- Store the beef jerky in an airtight container in the refrigerator.
