- 6 slices of bacon (coarsely chopped)
- 1 pound ground beef (80% lean)
- 3 cloves minced garlic
- 1 1/2 cups shredded cheddar (divided)
- 1/2 (8-ounce) package cream cheese (softened)
- 6 large eggs
- salt and pepper
- Lightly grease the inside of a slow cooker with cooking spray.
- Cook the bacon in a large skillet over medium-high heat until crisp then drain on paper towel.
- Reheat the skillet and add the ground beef – cook until browned, breaking it up into chunks with a wooden spoon.
- Stir in the garlic then season with salt and pepper and cook 1 minute more.
- Spoon the mixture into the slow cooker and top with half the bacon and 1 cup shredded cheese.
- Beat together the cream cheese and eggs with a hand mixer then spoon it over the beef.
- Cover and cook on low for 3 ½ to 4 hours until the center of the pie is just set.
- Sprinkle in the remaining cheese and bacon then cook for another 10 minutes until it is melted.
- Cut the bacon cheeseburger pie into slices to serve.
