- 1/4 cup chia seeds
- 1 1/3 cup unsweetened almond milk
- 1/2 tsp So Nourished granular erythritol
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1 cup grated carrot
- 1 tsp vanilla extract
- 1 cup plain Greek yogurt
- 1/2 cup toasted pecans
- Combine the chia seeds, almond milk, cinnamon, nutmeg, ginger, erythritol and grated carrot in a bowl. Stir to combine.
- Let the chia seeds soak for about 30 minutes or more, stirring occasionally. The mixture will thicken as the seeds absorb the moisture.
- Stir in the Greek yogurt.
- Divide between bowls then chop the toasted pecans and use them as a garnish.
- Enjoy cold!
