The Perfect Low Carb Carrot Cake Snack

Have you ever gotten hungry a little bit after lunch but before it was even close to dinner time? If so, you are not alone! That midday time when you are feeling hungry and need a pick me up is quite common and, it can also be a tricky time to navigate. What do you eat? What can fall into your keto diet without putting you over the edge for daily carbs? What would satisfy your mid day need for food?
Low Carb Carrot Cake Energy Balls
Scientists have actually studied this mid day slump time when you start to feel hungry and tired at the same time. Since many people wake up early to go into work during the week, around 2:00pm or 3:00pm your body is ready for a break. Your core temperature actually drops which is a signal for your brain to release melatonin, a hormone in your body that makes you sleepy. Around this time, you are also likely experiencing post-lunch hypoglycemia, when your body is demanding some kind of food for energy. Most people may turn to sweets as a quick source of fuel but in order to solve this middle of the day exhaustion, scientists have actually suggested eating a snack of healthy fats to fill you up and give you the energy your body needs.
So let’s follow the scientists suggestions and give you a perfect mid day snack, full of healthy fats! Let’s also make it a sweet, keto friendly snack to satisfy that natural need for sweetness to perk you up. We bring you the carrot cake energy ball!
Keto Carrot Cake Energy Balls
While these energy balls are made much the same as most energy balls, with all the ingredients mixed together into a dough ball, we added a few extra ingredients to make them really taste like cake. Cinnamon, nutmeg, ground ginger and sugar free maple syrup play a huge role in providing the carrot cake taste that you love. Of course, fresh grated carrots are a must for anything that is carrot cake themed! To finish off the snack, the balls are rolled in shredded coconut, giving a little extra tropical flavor and also a beautiful protective outside coating.
Once you give these carrot cake energy balls, they are going to become one of your favorite go-to mid day snacks for sure. Pack one for the office and enjoy it around 2:30 when that sleepy, hungry feeling hits. It will perk you right up and help you get through the rest of the day!
