Finding a great cookie recipe that fits into a low carb, keto diet can be quite the challenge. You want a cookie that is not too dry, sweet but not high in carbs, and also has a good balance of flavors. While we have already given you many amazing cookie recipes that fit this description, why not add one more! Zucchini cookies are here and they are the newest cookie on the keto scene that we are sure you will love.

Many people may think of zucchini as a fall vegetable but a strong zucchini plant will keep producing fruit well into the fall. The zucchini may start to grow a little slower but, since a zucchini can double in size overnight, it still won’t take long to get a big enough vegetable to make these cookies! The recipe calls for half a cup of grated zucchini which you can definitely get out of one, medium-sized vegetable.

When using zucchini in a cookie recipe, you can be assured that your cookies will be moist and chewy. Zucchini has a very high water content that will prevent the cookies from drying out as they bake. No one wants a dry cookie! Of course, zucchini also adds some great nutrients to the recipe, making these cookies almost suitable for breakfast (they are pretty much as healthy as a muffin after all!). Zucchini is high in antioxidants, can help aid in digestion and has been shown to reduce blood sugar levels. The taste of zucchini is also quite mild so you will be getting all these amazing health benefits, a super moist cookie and no overpowering vegetable taste. Zucchini for the win!

You may notice that this recipe contains psyllium husk powder which is a soluble fiber made from a herb native to India. It is mainly used in this recipe as a thickener, helping the cookie dough bind together and not be too runny or loose. A little psyllium powder goes a long way so only use the ¼ tsp that is recommended. Once you stir it into the batter, you will notice the effects right away as it thickens the cookie dough almost immediately!

Keto Zucchini Cookies

Dark chocolate chips are a great addition to this recipe and the flavor is perfect with the zucchini. You can choose to add chopped walnuts, cashews, or other nuts as well which would all work great too. So, while the zucchini is still ripe and growing in your garden (or at the local supermarket!) and you are craving a healthy but flavorful cookie, whip up a batch of these, and let us know what you think.   1. Preheat your oven to 350 degrees F.
  2. In a medium sized bowl, whisk together the eggs, butter, monk fruit and vanilla.
  3. Once combined, add the grated zucchini and mix again.
  4. Add the flour, psyllium husk powder (or xanthan gum), baking powder, cinnamon, salt and nutmeg. Mix until a smooth batter forms.
  5. Fold the chocolate chips into the batter.
  6. Scoop the cookie dough onto a parchment lined cookie sheet, making about ten evenly sized balls. Flatten each ball gently with your hand (the dough will not spread much when baking).
  7. Bake the cookies in the preheated oven for 11-12 minutes or until the edges begin to turn golden brown. Remove from the oven and let sit on the tray for another ten minutes before moving to a cooling rack or eating.
