Salmon is also a fantastic source of protein. While us keto followers need to make sure to keep our fat levels super high, we also need to make sure to get that protein! One 3.5 ounce serving of salmon has about 23 grams of protein so it checks that box as well! Really, we could go on and on about the health benefits of salmon but what you really may be wondering about is our recipe. How to make salmon taste good? As we said before, we like to grill it! And here is how.
We marinate the salmon and the zucchini in a mix of lemon juice, butter, lemon zest, dill, and parsley. You only need to marinate the fish for a few minutes as it will soak up a lot of the flavors right away. Also, if fish sits too long in a lemon marinade, the acidity may start “cooking” the fish!
The marinated fish and veggies are then skewered on bamboo or metal skewers and grilled for just a few minutes. You want the fish and zucchini to have nice black grill lines to be sure you get that fresh, hot off the grill taste! After that, you are ready to eat! The whole recipe takes less than 20 minutes to put together and is full of tasty, perfect, summery flavors that we know you will enjoy.

- 1.5 pounds salmon
- 2 cups chopped zucchini
- 2 tbsp melted butter
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp chopped parsley
- 2 tsp chopped dill
- Preheat your grill to medium high heat
- In a large mixing bowl, combine the butter, lemon juice, lemon zest, salt, pepper, parsley and dill. Mix together well.
- Cut the salmon into cubes about 1 inch big and place in the bowl along with the zucchini. Toss the veggies and fish in the marinade.
- Skewer the veggies and salmon (alternating pieces on the skewer) and then grill for about 6-8 minutes, flipping halfway through.
- Serve the skewers while hot.
