The Perfect Low Carb Smoothie

Let me tell you a little about my new favorite flavor combination- maple and coconut. These two ingredients may not be the first thought that comes to your mind when you think of blending flavors but it will soon be your favorite mix. I just know it! The tropical taste of coconut and the warm, vanilla notes of maple are so perfect when blended together. It is actually hard to believe that it took me this long to discover this!

To celebrate the marriage of maple and coconut, we have created an amazing smoothie that you can enjoy anytime. But seriously, it is great in the summer when you want a little tropical flair (thanks coconut!) and it is ideal in the winter when maple syrup is many people’s go-to flavoring. We love this smoothie at breakfast but it also makes for a great, ice cream-like dessert. So how do you make such a wonderful drink? And how can something so amazing possibly be low carb? This smoothie starts with unsweetened coconut milk. For this recipe, we used the coconut milk that you find in the carton in the refrigerated section of your grocery store. It has the consistency of regular milk which we love for smoothies. You can swap it out for unsweetened canned coconut milk if you want but just know that the nutritional info for the recipe will change. Canned coconut milk has a lot more fat and also some more carbs. However, it is still keto-approved and quite delicious.

The next thing you may be wondering about is how we get the maple taste into the smoothie without loading in the carbs. The answer is simple- So Nourished Pancake Syrup. This amazing syrup has practically no carbs and tastes exactly like real maple syrup. It is made with a blend of sweeteners, all of which results to only one net carb per 2 tablespoons of syrup. Yes, the syrup is perfect in this smoothie, but you are definitely going to want to use it in all sorts of other things. Pour it on pancakes, into yogurt, over keto waffles…it’s the best.

To add a little extra dimension and taste to our low carb smoothie, we added cinnamon and vanilla extract. Cinnamon compliments the warmer notes of the smoothie and vanilla just makes everything better. Did you know that vanilla extract makes foods taste sweeter without adding carbs? It’s true! And another reason we love to add a little splash to almost everything we bake.

Ice makes our coconut maple smoothie creamy and cold. A little smoothie trick is to freeze the coconut milk in an ice cube tray and then skip the ice altogether. This will make your smoothie have more flavor and be a little less watered down. Making coconut milk ice cubes does require planning though. But we know you’ll be making this delicious smoothie all the time so maybe you should just go freeze some coconut milk now…

  2. Puree until smooth and thick.
  3. Pour into 4 glasses and enjoy!
