- 1 3/4 cup almond flour
- 1/4 cup coconut flour
- 2/3 cup So Nourished Powdered Erythritol
- 1/4 tsp salt
- 1/2 cup butter
- 2 tbsp cream cheese
- 2 tsp pure vanilla extract
- red gel food coloring
- green gel food coloring
- Place the almond flour, coconut flour, powdered erythritol and salt in the bowl of a stand mixer and mix together.
- Add the butter to the flour mix, adding it in 1 tbsp cubes at a time. Mix until the dough looks crumbly and sand-like.
- Add the cream cheese and vanilla and blend until a thick dough forms.
- Divide the dough into two balls and add the red gel food coloring to one and green to the other. Mix each ball separately, using your hands to blend the dye in evenly.
- Wrap each dyed cookie dough in plastic wrap and store in the fridge for 30 minutes to chill.
- Preheat the oven to 350 degrees f and line two sheet trays with parchment.
- Roll each colored dough out separately until they are each about ¼ inch thick. Place the green dough sheet on top of the red dough sheet then roll them together lengthwise, creating a long long. Wrap the dough and chill for another 30 minutes.
- Slice the log into ¼ inch pieces and place the spirals on the prepared sheet tray.
- Cook for 10 minutes then let cool on the tray and serve.
