Red and Green Low Carb Christmas Cookies
One gift that I absolutely love to give is cookies. I’m a big fan of making all different kinds of cookies, wrapping them up on a pretty tray and handing them out to everyone I know. Each year I make cookie trays for my friends, for my family, and even for my mailman! Everyone loves and appreciates a beautiful assortment of cookies.
I especially like to make cookies that look pretty on their own. Cookies that come out of the oven looking picture-perfect are ideal. People do eat with their eyes! So a nice looking cookie is going to be well received.
If you are also a fan of gorgeous, easy cookies, then this recipe is definitely for you. Our red and green spiral cookies look like Christmas baked into a bite-sized treat. The bright colors are eye-catching and the twisty spiral is quite fun. These cookies stand out on a cookie tray for sure! They also make sure that your cookie tray scream of the holidays- you can’t deny that red and green!

Of course, anytime I put together cookie trays, I always use low carb cookies. While not everyone that I give cookies trays to follow low carb diets, I certainly do and it is just easier to bake cookies that I can eat too. Besides, I have enough delicious keto cookie recipes that are just as good if not better than “traditional” cookies. In all the years I have been handing out cookie trays at Christmas, not one person has guessed that my cookies are low carb. They are so good that they must be packed with carbs. But they aren’t!
Now, back to my keto-approved red and green sugar cookie swirls- how does such a great cookie exist? Let me tell you! It all begins with the flours. I use a mix of almond flour and coconut flour in this recipe. The almond flour gives the cookies a nice nutty taste and a soft texture. The coconut flour is a little denser and helps to bind the cookie dough together. Both have lots of healthy fats which are an imperative part of a keto diet!
Next, my favorite sweetener comes into play- powdered erythritol. Powdered erythritol has an amazingly sweet taste and it melts right into the cookie dough. There is no metallic after taste with erythritol which is why no one can tell these cookies are low carb- they taste naturally sweet!
I use a blend of cream cheese and butter to make the cookie dough as I find the cream cheese adds a perfect tangy flavor that goes well with the overall sweetness of the cookie. It also helps lighten the cookie dough visually which brings out the red and green colors later on.
Once the cookie dough has been made, divided, and dyed red and green, it is rolled up into a log and sliced. Those festive slices are baked into an incredible, melt in your mouth cookie that you will go crazy for. These can be the centerpiece of your cookie tray! Or, you can just give these out on their own- who needs an assortment of cookies when you already have one perfect keto cookie to enjoy?

- 1 3/4 cup almond flour
- 1/4 cup coconut flour
- 2/3 cup So Nourished Powdered Erythritol
- 1/4 tsp salt
- 1/2 cup butter
- 2 tbsp cream cheese
- 2 tsp pure vanilla extract
- red gel food coloring
- green gel food coloring
- Place the almond flour, coconut flour, powdered erythritol and salt in the bowl of a stand mixer and mix together.
- Add the butter to the flour mix, adding it in 1 tbsp cubes at a time. Mix until the dough looks crumbly and sand-like.
- Add the cream cheese and vanilla and blend until a thick dough forms.
- Divide the dough into two balls and add the red gel food coloring to one and green to the other. Mix each ball separately, using your hands to blend the dye in evenly.
- Wrap each dyed cookie dough in plastic wrap and store in the fridge for 30 minutes to chill.
- Preheat the oven to 350 degrees f and line two sheet trays with parchment.
- Roll each colored dough out separately until they are each about ¼ inch thick. Place the green dough sheet on top of the red dough sheet then roll them together lengthwise, creating a long long. Wrap the dough and chill for another 30 minutes.
- Slice the log into ¼ inch pieces and place the spirals on the prepared sheet tray.
- Cook for 10 minutes then let cool on the tray and serve.
