- 2 tbsp butter
- 1/2 cup chopped onions
- 1 tbsp minced garlic
- 2 tbsp fresh grated ginger
- 1 tbsp garam masala
- 3 tbsp tomato paste
- 1 1/2 tsp salt
- 3 pounds chicken breast, cubed
- 1 tbsp lime juice
- 1 cup canned coconut milk
- 1/4 cup fresh chopped cilantro
- 2 cups cauliflower rice, cooked
- Place the butter in a large skillet and melt over medium heat.
- Add the chopped onion and garlic to the pan and cook for two minutes.
- Add the ginger, garam masala and salt to the pan and stir. Cook for one minute.
- Add the tomato paste and cook for another 2 minutes, stirring occasionally. Pour the mix into the pot of a slow cooker.
- Add the chicken breast, lime juice and coconut milk to the slow cooker as well, Stir briefly to coat the chicken in the sauce.
- Cover and cook over low heat for 7 hours.
- Serve the cooked butter chicken with the cauliflower rice and sprinkle each plate with the fresh chopped cilantro. Enjoy hot.
