- 1/2 cup coconut flour
- 1/4 tsp baking soda
- 1/4 cup melted butter
- 4 eggs
- 1/4 tsp vanilla extract
- 1/2 Tbsp So Nourished granular erythritol
- 1/4 tsp salt
- 1/4 tsp xanthan gum
- Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
- Mix the coconut flour, baking soda, xanthan gum and salt together in a large bowl.
- Add the melted butter into the dry ingredients and beat well.
- Add the eggs, erythritol and vanilla and mix until smooth. The batter may look a little wet and thin. Let the batter sit for about 10 minutes to thicken. The coconut flour will absorb some of the moisture and thicken nicely.
- Scoop the biscuit batter onto the prepared sheet tray, making scoops about 3 Tbsp in size.
- Bake the biscuits for 20 minutes or until they begin to turn golden brown and a toothpick comes out of the center of the biscuit cleanly.
- Let cool and then enjoy!
