Low Carb Cheesesteak Casserole Dinner
This is going to be your new favorite dinner. In fact, it is going to be a favorite for everyone in your house. It is easy, packed with flavor and it’s keto approved! Sounds like it checks all the boxes!
So what is this fantastic dinner we are talking about? It’s Philly cheesesteak casserole of course! It is essentially a Philly cheesesteak, decomposed into an easy, carb-free casserole. But what is a Philly cheesesteak anyway? We’re sure you have heard that term before but do you really know what it even is? Does it have steak? Is it just from Philadelphia? Is there cheese? Yes, yes, and yes. But let me tell you a little more.

A cheesesteak is a sandwich that is made with thin-sliced beef, melted cheese, and a big roll. The sandwich was first made popular in the Philadelphia region. There are lots of variations of this classic sandwich these days but, a true Philly cheesesteak is made with these simple ingredients:
- Sliced ribeye steak
- Grilled onions
- American processed cheese
Variations on the sandwich can be delicious (and we have taken a few culinary liberties in our recipe for sure!) but for the classic Philly version, you don’t need much!
If you are following a keto diet, you probably don’t eat Philly cheesesteak sandwiches very often. That’s likely because of that big roll that the steak and cheese is wrapped in. Rolls equal carbs and Philly cheesesteak rolls are huge- aka so many carbs. We have created a way that you can have all that juicy steak and cheese without the roll. Just make it into a casserole!
Our recipe starts with ground beef rather than thin pieces of steak. We have found that ground beef cooks into a casserole better. It is easier to slice and serve than larger pieces of steak. Ground beef is also a little more economical making it great for those on a budget.
We use the traditional onions to add flavor to the beef but we also toss in some sliced green peppers. Green peppers have a nice earthy flavor with just a hint of spice. They go well in ground beef and definitely make the Philly cheesesteak come to life. Yes, it’s a little different than the classic sandwich but we like it!
Some garlic and seasoned salt are added to the meat and then the beef mix is spread in a casserole dish. Slices of American cheese cover the whole pan and beef. The more cheese, the better! You need to have the cheese in the Philly CHEESEsteak!
A mix of egg and cream are poured over the casserole which will help hole the meal together, making it sliceable after it bakes. Then you are ready to bake and eat your hot Philly cheesesteak style casserole. When that cheese starts to turn golden brown, it is ready to serve! Take a big slice because this recipe makes plenty to go around. Our Philly cheesesteak casserole is easy, irresistible, and it’s keto. What more could you need?

- 2 pounds ground beef
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 white onion, chopped
- 1 Tbsp minced garlic
- 1 tsp Lawry's Seasoned Salt
- 10 slices American cheese
- 4 eggs
- 1/2 cup heavy cream
- Preheat your oven to 350 degrees F and grease a 9x13 casserole dish.
- Add the ground beef to a large skillet and heat over medium heat. Break the beef up as it cooks to make smaller pieces. Let the meat brown. It does not need to fully cook, just get a nice browned outside.
- After about 3 minutes of cooking the beef, add in the onions and peppers. Cook for another 5 minutes, stirring occasionally.
- Add the Lowry salt and garlic to the skillet and stir into the meat mix.
- Spread the beef mix in your prepared casserole dish.
- Lay the cheese slices across the top of the ground beef mix, covering the beef completely. It is okay to overlap the cheese slices.
- In a small bowl, whisk together the eggs and heavy cream. Pour the egg mix over the casserole.
- Bake the casserole for about 30 minutes or until the top is a golden brown. Serve while hot.
