Panna cotta is a great dessert for anyone looking for a simple but indulgent treat. Make a batch of raspberry lemon panna cotta in the morning and by the time dinner rolls around, you’ve got an impressive keto dessert ready to go! Most, if not all, the ingredients can already be found in your kitchen!
As always, this low carb dessert is sugar-free! It’s amazing what you can do with a bit of erythritol; though if you’ve got a favorite sweetener, feel free to use it here! You can also substitute raspberry for any other berry of your choice (but what those carbs though!). We used some sugar-free, high fiber raspberry jam we purchased and it worked quite well here. About 2 tablespoons of jam per panna cotta will do, plus some fresh berries as a garnish. The combination of raspberries and cream is heavenly!

Our favorite part of this recipe was the fun we had choosing the molds the panna cotta would chill in. We used several small bowls, cups, ramekins and even martini glasses! The possibilities are endless. Our favorite mold ended up being that of a teacup. It gave this raspberry lemon panna cotta a perfectly round shape that just begged to be eaten!
