- 1 tablespoon olive oil
- 8 slices bacon (chopped)
- 1 small red pepper (chopped)
- 9 large eggs
- 1/4 cup heavy cream
- 1/4 cup grated parmesan cheese
- salt and pepper
- 1 cup diced mushrooms
- 1/2 cup fresh chopped basil
- 1 cup shredded mozzarella cheese
- Preheat the oven to 350°F.
- Heat the oil in a medium ovenproof skillet over medium-high heat.
- Add the bacon and cook until browned then stir in the red pepper – cook until tender.
- Whisk together the eggs, heavy cream, and parmesan in a medium bowl then season with salt and pepper.
- Stir the mushrooms into the skillet and cook for 1 minute then stir in the basil and sprinkle with mozzarella cheese.
- Pour in the egg mixture, using a spatula to lift the ingredients so the eggs run under.
- Bake for 6 to 8 minutes then broil for 5 minutes to brown the top. Slice to serve.
