- 1 cup beef broth
- 1/2 cup soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons So Nourished powdered erythritol sweetener
- 1 tablespoon minced garlic
- 2 teaspoons fresh grated ginger
- 1 pound beef flank steak cut into cubes
- 3 cups chopped broccoli florets
- 2 tablespoons olive oil
- 1/4 to 1/2 teaspoon red pepper flakes optional
- 1 medium head cauliflower pulsed into rice-like grains
- salt to taste
- Turn the slow cooker on to low heat while you prepare the ingredients.
- Whisk together the beef broth, soy sauce, sesame oil, erythritol, garlic, and ginger in a bowl then pour into the slow cooker.
- Toss the beef with the salt and red pepper flakes then add to the slow cooker.
- Cover and cook on low heat for 5 to 6 hours.
- Stir the ingredients in the slow cooker then add the broccoli on top.
- Cook for another hour on low heat or until the veggies are done to your liking.
- Meanwhile, heat the oil in a large skillet over medium-high heat and add the cauliflower rice.
- Cook for 4 to 5 minutes, stirring often, until tender then spoon into bowls.
- Top the cauliflower rice with the beef and broccoli then serve hot.
