- 1 cup chopped walnuts
- 1 cup unsweetened shredded coconut
- 2 tbsp coconut oil
- 3 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp peppermint extract
- 1/8 tsp salt
- 2 ounces Lily's Chocolate Chips
- 1 sugar free candy cane
- Place the walnuts, shredded coconut, coconut oil in a food processor and pulse to form a chunky paste.
- Add the remaining ingredients to the food processor and pulse to form a thick dough.
- Scoop the dough into 1 inch balls, rolling each smooth with your hands.
- Place the rolled energy balls on a flat sheet tray then drizzle with the melted dark chocolate. Sprinkle the crushed candy cane over the balls.
- Let the chocolate harden and then enjoy!
