Place all of the ingredients, except the shredded coconut, in a food processor and puree until fully combined. The dough should form a ball and come together nicely.
If the dough is a little too wet, add another 2 Tbsp of coconut flour. If it feels too dry, add 1 Tbsp water. It should be firm but not sticky.
Scoop about 2 Tbsp of dough into your hands and roll into a ball. Repeat with the remaining dough.
Roll each ball in the shredded coconut to coat the outside
