- 1 pound ground beef (80% lean)
- 1 pound ground sausage
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1 cup shredded zucchini (pressed to remove moisture)
- 1 large egg
- 1 tablespoon minced garlic
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- salt and pepper
- 1 cup no-sugar-added tomato sauce
- 2 cups shredded provolone cheese
- Preheat the oven to 400°F and grease a large casserole dish with cooking spray.
- Combine the ground beef, ground sausage, mozzarella, parmesan, zucchini, egg, and seasonings in a large bowl and mix well by hand.
- Shape the mixture into 24 meatballs and arrange them in the casserole dish.
- Pour the tomato sauce over the meatballs and top with the shredded provolone cheese.
- Bake for 30 minutes then drain the cooking liquid.
- Let the casserole bake for another 10 to 15 minutes until the cheese is melted and browned.
