Ingredients
  • 1 tablespoon olive oil
  • 6 bone-in chicken thighs
  • 1 cup low carb tomato sauce
  • 3 ounces sliced pepperoni
  • 1 1/2 cups shredded mozzarella cheese
  • salt and pepper
Instructions
  1. Preheat the oven to 350°F.
  2. Heat the oil in a 12-inch cast-iron skillet over medium heat.
  3. Season the chicken with salt and pepper then add to the skillet.
  4. Cook for 3 to 4 minutes on each side until browned.
  5. Pour the low-carb tomato sauce over the chicken and spread it evenly.
  6. Top the chicken with pepperoni slices and sprinkle with mozzarella.
  7. Bake for 25 minutes until the cheese is melted then place under a broiler to brown the cheese.
  8. Remove from heat and let rest for 5 minutes before serving.
