  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Whisk together the almond flour, coconut flour, ginger, cinnamon, and salt in a bowl.
  3. In a separate bowl, cream together the butter and erythritol until light and fluffy.
  4. Beat in the egg then slowly beat in the dry mixture.
  5. Turn out the dough and knead until it comes together. Then scoop into balls.
  6. Roll the dough balls in powdered erythritol, if desired, then place them on the baking sheet, spaced about 2 inches apart.
  7. Gently flatten each cookie then bake for 8 to 10 minutes until golden brown.
