  1. Separate the egg yolks and whites.
  2. Beat the egg whites to stiff peaks with a pinch of salt in a metal bowl.
  3. In a separate bowl, whisk together the egg yolks, coconut milk, and coconut oil.
  4. Whisk in the coconut flour, baking powder, and cinnamon.
  5. Fold in the egg whites and let rest for 5 minutes.
  6. Grease a large skillet with cooking spray and heat over medium-high heat.
  7. Spoon the batter into the pan and cook the pancakes until bubbles form on the surface.
  8. Flip the pancakes and cook until browned on the bottom. Makes 2 servings.
  9. To reheat, warm in a 350˚F oven for 10 to 15 minutes.
  10. Drizzle with pancake syrup to serve.
