Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
Mix the coconut flour, baking soda, xanthan gum and salt together in a large bowl.
Add the melted butter into the dry ingredients and beat well.
Add the eggs, erythritol and vanilla and mix until smooth. The batter may look a little wet and thin. Let the batter sit for about 10 minutes to thicken. The coconut flour will absorb some of the moisture and thicken nicely.
Scoop the biscuit batter onto the prepared sheet tray, making scoops about 3 Tbsp in size.
Bake the biscuits for 20 minutes or until they begin to turn golden brown and a toothpick comes out of the center of the biscuit cleanly.
