Ingredients
  • 12 ounces fresh cod fillets
  • 1 1/2 tablespoons coconut flour
  • 1 (3.5-ounce) bag pork rinds
  • 1 large egg
  • 1 teaspoon water
Instructions
  1. Preheat the oven to 400°F.
  2. Cut the fish into strips and season with salt and pepper.
  3. Sprinkle the fish with coconut flour and toss until evenly coated.
  4. Place the pork rinds in a zippered freezer bag and crush them into crumbs.
  5. Whisk together the egg and water then dip each fish stick in the mixture.
  6. Dredge the fish sticks in the pork rind crumbs then place them on a greased baking sheet.
  7. Bake for 12 to 15 minutes until golden brown then serve immediately.
