Ingredients
  • 1 tablespoon olive oil
  • 1 small yellow onion (diced)
  • 1 small green pepper (diced)
  • 2 cloves minced garlic
  • 2 pounds ground turkey breast (85% lean)
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne (more if desired)
  • 1 cup low carb tomato sauce
  • 1/2 cup canned black beans (rinsed and drained)
  • salt and pepper
  • shredded cheese (to serve)
  • sour cream (to serve)
Instructions
  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and peppers then sauté for 2 to 3 minutes until browned.
  3. Stir in the garlic and cook for 1 minute more.
  4. Add the ground turkey and season with salt and pepper.
  5. Cook until the turkey is browned, breaking it up with a wooden spoon, then stir in the spices.
  6. Stir in the tomato sauce and black beans then simmer on medium-low for 10 minutes.
  7. Adjust the seasoning to taste then serve hot with shredded cheese and sour cream.
