  1. Whisk the egg whites in a bowl until stiff peaks form.
  2. In a separate bowl, whisk together the coconut flour, granulated erythritol, baking powder, and egg yolks.
  3. Whisk in the melted butter until well combined then stir in the almond milk and vanilla until smooth.
  4. Fold in the egg whites gently so as not to knock out the air.
  5. Preheat and grease a waffle iron then cook the waffle batter according to the manufacturer’s instructions.
  6. Prepare the cinnamon cream by whisking the heavy cream to stiff peaks.
  7. Whisk in the cinnamon and sweeten to taste with powdered erythritol.
  8. Spoon the cinnamon cream over the warm waffles to serve.
