Ingredients
  • 1/4 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 1 tsp dried Italian seasoning
  • 3 cups fresh baby spinach
  • 4 ounces fresh mozzarella (cubed)
  • 2 cups cherry tomatoes (quartered)
  • 1/2 small red onion (sliced very thin)
  • 4 ounces sliced pepperoni
  • salt and pepper
Instructions
  1. Whisk together the olive oil, lemon juice, and Italian seasoning in a large salad bowl.
  2. Add the spinach, mozzarella, tomatoes, and red onion and toss until evenly coated.
  3. Add the sliced pepperoni then season with salt and pepper.
  4. Toss to combine then cover and chill until ready to serve.
