Instructions
Whisk together the olive oil, lemon juice, and Italian seasoning in a large salad bowl.
Add the spinach, mozzarella, tomatoes, and red onion and toss until evenly coated.
Add the sliced pepperoni then season with salt and pepper.
Toss to combine then cover and chill until ready to serve.
