- 1 cup almond flour
- 1/4 cup So Nourished granular erythritol
- 1 egg white
- 1/2 tsp almond extract
- 1 Tbsp So Nourished Powdered Erythritol
- Preheat your oven to 250 degrees F and like a sheet tray with parchment paper.
- Mix the almond flour, granular erythritol, egg white and almond extract together in a large bowl. This will make a very thick dough.
- Roll the dough into small, 1 inch balls using your hands. Place the balls on the prepared cookie sheet about 1 inch apart.
- Bake the cookies for about 55-60 minutes.
- Remove from the oven and let cool slightly. Dip the cookies into the powdered erythritol and then cool completely.
