- 3 pounds boneless skinless chicken thighs
- 1 pound frozen shrimp (deveined and tails removed)
- 1 pound sausage (cut into circles)
- 1 red bell pepper, sliced
- 1 cup chopped white onion
- 1 cup chopped celery
- 1/4 cup chopped garlic
- 6 oz tomato paste
- 15 oz canned diced tomatoes
- 1 tbsp Cajun seasoning blend
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 tsp ground black pepper
- 1/2 tsp xanthan gum
- 1/2 tsp salt
- 2 cups chicken broth
- Place all of the ingredients except for the shrimp in your slow cooker.
- Mix and then cover the slow cooker and set the temperature to high
- Cook on high for 4 hours.
- Add the shrimp to the bowl, mix, cover again and cook for 20 more minutes
- Serve while hot!
