- 4 cups cooked chicken thighs (chopped)
- 1/2 cup ground flaxseed
- 1/4 cup diced yellow onion
- 2 tablespoons nutritional yeast
- 4 large eggs (whisked)
- 1/2 teaspoon chili powder
- 3 tablespoons coconut oil (divided)
- salt and pepper
- Place the chicken in a food processor and pulse until finely shredded.
- Transfer the chicken to a large bowl and add the ground flaxseed, onion, nutritional yeast, and eggs.
- Stir in the chili powder, salt, and pepper and mix until well combined.
- Divide the mixture into 8 even portions and shape into patties by hand.
- Heat half the oil in a large skillet over medium heat.
- Add four of the patties and cook until browned on the bottom.
- Flip the patties and cook until they are cooked through then remove to a plate.
- Repeat with the remaining oil and chicken patties.
- Serve the chicken patties on keto bread or lettuce wraps with your choice of toppings.
