Ingredients
  • 1 pound cooked shrimp (peeled and deveined)
  • 1/4 cup fresh lime juice
  • 1 teaspoon olive oil
  • salt and pepper
  • 1 medium avocado (pitted and diced)
  • 1 small tomato (diced)
  • 1/4 cup diced red onion
  • 2 tablespoons fresh chopped cilantro
  • 1 jalapeno (seeded and minced, optional)
Instructions
  1. Chop the shrimp into bite-sized pieces.
  2. Whisk together the lime juice, olive oil, salt, and pepper in a bowl.
  3. Toss in the shrimp, avocado, tomato, red onion, cilantro, and jalapeno.
  4. When well combined, cover and chill until ready to serve.
