Spring Minestrone Soup

Ingredients
  • 2 tbsp olive oil
  • 1/4 cup green onions, chopped
  • 1 tbsp garlic, chopped
  • 1 can diced tomatoes (15 ounces
  • 4 cups vegetable stock (or broth)
  • 1 tbsp dried basil
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 can artichoke hearts (drained, rinsed)
  • 1/2 pound asparagus, chopped
  • 2 cups kale, chopped
  • 1/4 cup fresh grated Parmesan
Instructions
  1. Add the olive oil to a large pot and heat over medium.
  2. Add the onions and garlic and cook for about 2-3 minutes or until the garlic begins to brown.
  3. Add the tomatoes and vegetable stock. Bring to a simmer and cook for 10 minutes.
  4. Add the basil, salt and pepper and stir
  5. Add the artichoke hearts and asparagus and cook for another 10 minutes.
  6. Add the kale and stir well. Cook for another minute to wilt the kale and then scoop into bowls.
  7. Top with the grated Parmesan and enjoy hot!
