  1. Make sure to freeze your sugar-free white chocolate chips beforehand to ensure they stay as chips while baking. If you’re using store-bought chips, you may skip this step.
  2. Preheat your oven to 350°F. In a large bowl, whisk the erythritol and stevia into the egg, aerating it a little. Then, add in the coconut oil (or melted butter) and vanilla extract and whisk well to combine.
  3. In a large sifter set onto the bowl of wet ingredients, combine the almond flour, matcha powder, baking powder and xanthan gum. Mix and sift into the wet ingredients. Add a pinch of sea salt, then use a silicone spatula to combine everything very well.
  4. Next, fold in the sugar-free white chocolate chips.
  5. Lightly grease a ramekin or baking container of choice. Pour in the mug cake batter and bake for 12 minutes.
  6. Let cool for 5-10 minutes and enjoy!
