Low Carb Breakfast Biscuits and Gravy
Biscuits and gravy on a keto diet?! Is that even possible? It absolutely is and it is incredibly delicious. Our perfectly golden, almond flour biscuits are mouthwatering on their own but when topped with an incredibly creamy sausage gravy, this is a breakfast you will not be able to resist. So get out your mixer, preheat your oven and get ready to make a keto meal you never dreamed possible.
As you may know, regular white flour is off-limits on the keto diet. White, all-purpose flour is full of carbs and has little in the way of nutrition in general. Our biscuits are made with almond flour which is essentially ground almonds. Almonds are perfect for keto baking as it has the texture of regular flour, lots of healthy fats and a yummy, nutty taste. Baked goods made with almond flour tend to be a little denser than a traditional baked good but that can also be part of the charm. In order to make these biscuits a little more light and fluffy, our recipe asks you to whip egg whites and fold them into the batter. This helps the biscuits puff up as they bake and make a perfect keto baked good.

We like to bake the biscuits in a muffin tin as the batter is quite soft and does not hold its shape well. You can, however, bake the muffins on a sheet tray if you’d like. Simply line a tray with a piece of parchment or a silicone baking mat. Drop spoonful’s of the biscuit dough on the tray and then bake until the edges of the biscuit are golden brown (about 10-12 minutes). The biscuits will be a little flatter but taste just as great!
When following a keto diet, you want to be sure you get a good amount of healthy fats added into your diet. After all, fats are now your primary energy source! You will definitely be getting a good amount of fats when you use this recipe (21 grams per serving, in fact!). The sausage and cream cheese in the gravy is one source of fats while the almonds in the biscuits are another fantastic source. Starting your day with a nice helping of keto biscuits and gravy will set you up with the energy you need to tackle the day!
You can easily make this recipe ahead of time, setting yourself up with an amazing weekday breakfast option. The biscuits will keep at room temperature for 4-5 day when wrapped well. They heat up beautifully in the toaster oven or microwave. The gravy will keep for the same amount of time when stored in the fridge. Make a double batch to have breakfast for the whole family, for the whole week! Keto eating, is good eating.

- 1 cup almond flour
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp baking powder
- 2 tbsp butter
- 4 egg whites
- 1/4 tsp dried basil
- 1/4 tsp garlic powder
- 10 ounces ground sausage
- 1 cup cream cheese (softened)
- 1 cup chicken broth
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- Preheat your oven to 400 degrees F and spray a muffin tin with baking spray.
- Whip the egg whites in a large bowl until stiff peaks form.
- In a separate bowl, combine the baking powder, almond flour, salt and pepper. Work the butter into the dry mixture using your hands until a sandy texture is reached and there are no large pieces of butter.
- Fold the whipped egg whites into the dry, butter mix until fully incorporated.
- Scoop the dough into the muffin tin and then bake for about 12-15 minutes or until the biscuit muffins are golden brown.
- Remove the tray from the oven and let the biscuits cool in the pan.
- Place the ground sausage in large skillet and heat over medium high heat. Cook the sausage for about 6 minutes, chopping it with your spatula as it cooks to make it into small pieces.
- Add the cream cheese and the chicken broth to the pan with the sausage and stir to melt the cream cheese and blend with the broth.
- Lower the heat and let the mix simmer for 3 minutes then add the salt and pepper (taste the gravy and add more seasoning if needed).
- Cut the biscuits in half and fill each with about 1/3 cup of gravy. Enjoy while hot!
