- 1 teaspoon olive oil
- 1/2 small yellow onion (chopped)
- 2 (3-ounce) chorizo sausages
- 4 eggs
- salt and pepper
- Slice open the sausage casings and spoon the meat into a bowl then set aside.
- Heat the oil in a large skillet over medium-high heat.
- Add the onions and cook for 3 to 4 minutes until browned then stir in the sausage.
- Cook until the sausage is just cooked through then spread it evenly in the skillet.
- Crack the eggs into the skillet and season with salt and pepper.
- Break up the yolks a little bit with a wooden spoon, stirring the eggs into the sausage.
- Cook until the egg whites are firm and the yolks are done to your liking. Serve hot.
