- 4 cups unsweetened almond milk
- 1/2 cup So Nourished powdered erythritol sweetener
- 1 tablespoon vanilla extract
- Pinch salt
- liquid stevia (to taste)
- Whisk together the almond milk and erythritol in a medium saucepan over medium heat.
- Stir frequently until the almond milk is steaming then remove from heat.
- Whisk in the vanilla extract and salt along with the liquid stevia extract to taste then cool to room temperature.
- Pour the mixture into a container and freeze until solid.
- Defrost the ice cream for 10 minutes before scooping to serve.

Could I use this recipe as a base and add different flavors to make other flavors of ice cream? I’m making this recipe tomorrow and if I like it I want to run with it.
Can this be done with using organic honey instead of erythritol?
Honey is not keto friendly so I would not recommend using it in this recipe or any keto recipe.
Could Xylitol be used instead of erythritol ??

Hi can I use Canderal instead of the erythritol? Can I then ask why you add the stevia drops, is it not sweet enough? Thanks
Canderal’s main ingredient is sucralose, which is an artificial sweetener. Erythritol is more natural and we use it almost exclusively! We add the stevia drops because the combination of erythritol and stevia creates a very tasty product without the cooling/bitter effects that would arise had each sweetener been used alone.
