- 1/2 cup butter (softened)
- 1/4 cup So Nourished erythritol sweetener
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups almond flour
- 1/2 cup chopped walnuts
- 1/4 cup dried cranberries (unsweetened)
- 1/4 cup seedless raisins
- Preheat the oven to 350°F and grease an 8-inch round baking tin with coconut oil.
- Beat the butter and granulated erythritol on medium speed until light and fluffy.
- Add the cinnamon, nutmeg, and cloves then blend smooth.
- Beat in the eggs one at a time then beat in the vanilla and almond extracts.
- Whisk in the almond flour until it forms a smooth batter then fold in the nuts and fruit.
- Spread the mixture in the prepared baking pan and bake for 20 minutes until a knife inserted in the center comes out clean.
- Cool in the pan then turn out onto a cooling rack and dust with powdered erythritol.
