- 1 tablespoon olive oil
- 1 small yellow onion (diced)
- 1 small green pepper (diced)
- 2 cloves minced garlic
- 2 pounds ground turkey breast (85% lean)
- 1 1/2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon cayenne (more if desired)
- 1 cup low carb tomato sauce
- 1/2 cup canned black beans (rinsed and drained)
- salt and pepper
- shredded cheese (to serve)
- sour cream (to serve)
- Heat the oil in a large skillet over medium-high heat.
- Add the onion and peppers then sauté for 2 to 3 minutes until browned.
- Stir in the garlic and cook for 1 minute more.
- Add the ground turkey and season with salt and pepper.
- Cook until the turkey is browned, breaking it up with a wooden spoon, then stir in the spices.
- Stir in the tomato sauce and black beans then simmer on medium-low for 10 minutes.
- Adjust the seasoning to taste then serve hot with shredded cheese and sour cream.
