Family Friendly, Low Carb Chicken Nuggets
Ever since I was a kid, I have loved chicken nuggets. I think most kids out there feel the same! Now that I have my own children, I often turn to the classic chicken nugget as a dinner or lunch option. However, I definitely do not like giving my kids packaged, fast food nuggets. I prefer to make something that has a little bit of nutritional value and zero additives. I always try my best to feed my kids things they will enjoy but that is also good for them. Those little growing bodies need lots of nutrition!
Now that I am on a keto diet, it can be challenging to find foods that are good for the whole family. This is especially true about those chicken nuggets. Nuggets are traditionally coated in breadcrumbs which are definitely not part of a low carb diet. Luckily, there is a way to make chicken nuggets that are kid approved and also keto friendly. All you need is some almond flour and some cheese!

Instead of coating chicken pieces in breadcrumbs, I toss the chopped chicken breast with almond flour and grated parmesan cheese. This mix still gives the nuggets a golden brown, crispy exterior but without the carbs. No breadcrumbs means these nuggets are something I can enjoy. It also means that I can make just one meal for the whole family to enjoy. It’s perfect!
I also love that almond flour is healthier than breadcrumbs and gives the nuggets a few more vitamins and minerals than regular nuggets. Almond flour is made from finely ground almonds. You can easily make your own almond flour just by pulsing some whole almonds in a food processor or blender until they look like powder. You can also buy almond flour in most grocery stores or online. It is everywhere! That is because people love it!
Almond flour is full of protein, antioxidants and monounsaturated fats. These are the good kind of fats that can actually lower your cholesterol. When you coat your chicken breast in the almond flour, you are adding all those health benefits to the chicken. You can feel good popping the nuggets in your mouth, knowing that they are good for you!
Of course, almond flour also adds a nice nutty flavor to the nuggets. The ground almond taste is warm and filling. It goes perfectly with the juicy chicken too! I like to mix parmesan cheese with almond flour to add a salty flavor. Cheese is also a very kid-friendly food and will give these nuggets even more appeal. I know that my kids see me making this keto chicken nugget recipe and they immediately start asking “when is dinner?”.
I highly recommend making a double batch of nuggets. Maybe even a triple batch. You can coat the nuggets completely in the almond flour then freeze them. Bake or fry the keto chicken nuggets anytime you’d like! It’s nice having a simple, kid friendly, gluten free, keto-approved meal on hand. - 1 pound chicken breast
- 1 cup almond flour
- 1/4 cup fresh grated Parmesan
- 1/2 tsp Pinch salt
- 1 tsp Italian seasoning
- 1 egg
- 2 tbsp heavy cream
- 2 tbsp olive oil
- Cut your chicken breast into 1 inch thick and 2 inches long pieces. While the pieces do not have to be perfect, they should be all relatively the same size so they cook evenly. One pound of chicken should give you about 30 nuggets.
- In a small bowl, whisk together the egg and heavy cream.
- In a separate bowl, whisk together the flour, cheese, salt and seasoning.
- Dip the chicken into the egg mix and then into the almond flour mix, coating the chicken completely in the almond flour mix. Set the dipped chicken onto a clean sheet tray or plate while you dip all of the nuggets.
- Heat the olive oil in a large skillet over medium heat. Fry the nuggets for 3 minutes, flip and fry for another 3 minutes. You may need to cook the chicken in batches depending on how large your pan is. You can also use an air fryer to cook the nuggets, cooking them at 400 degrees F for 10 minutes or until golden brown.
- Enjoy the nuggets while hot or let them cool, place them in a zippered bag and freeze for up to a month.
