A Quick One-Pan Sausage Dinner for Two!
We’re all busy people, but that doesn’t mean you have to settle for a boring dinner. Ever!
One-pan dinners are great because you throw all your ingredients in and let it all cook and intertwine with each others’ flavors. Tonight we decided to combine the robust flavors of our sweet Italian sausages with some gentler Italian flavors. Why sweet sausages when we love the pain of spice? They’re less carby than spicy Italian sausages. We eat these a lot and carbs can add up. We prefer buying the low carb sausages and spicing them up ourselves!
Everything about this recipe screams Italian sausage dinner: from the meat, to the onions and mushrooms, to the creamy vodka sauce and cheeses. In fact, eating the meal made me think of eating lasagna, pizza and spaghetti with meatballs- it just had all those classic, cheesy, saucy, Italian tastes! Of course, we skipped all hose classic Italian carbs though- can’t have any of those while eating a keto diet! But that does not mean you have to miss out on all the great flavors that Italian food has to offer.

This dish was hearty and filling and the fact that you can make it in one pan is only a bonus. We love any meal that only requires one dish. Not only does that mean that cooking will be easier, but it also means that clean up will be much more simple. One pan to clean sounds like a total win!
We used our trusty cast iron skillet to hold this meal together and cook it to perfection. What’s great about cast iron skillets, among countless things, is that they go from stove-top to oven very easily. There are no plastic handles that will melt in the oven (been there, done that!) and they conduct heat very well, ensuring that your dish is cooked evenly and to perfection! They’re also durable and give your meats a nice char on the outsides. We love a well-charred steak.
Cast iron skillets are known for their durability and versatility. Anyone who has ever owned a cast iron skillet knows that you are not actually supposed to wash it with soap and water. Instead, you just run the pan with a damp towel gently to clean it. The flavors left behind are what adds to the flavor of the next dish. I know it sounds crazy but it is true! - 3 sausage links
- 1 tbsp white onion (finely diced)
- 4 oz. mushrooms
- 1/2 cup vodka sauce
- 1/4 cup Parmesan cheese
- 1/4 cup shredded mozzarella
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/4 tsp salt
- 1/4 tsp red pepper
- Preheat your oven to 350°F.
- Start off setting a cast iron skillet to heat up over a medium flame. When it's almost smoking, cook your sausage links until they're almost thoroughly cooked.
- While they're cooking, slice your mushrooms and onion.
- When the sausages are almost done, take them out of the skillet. Throw in your onions and mushrooms for them to brown up a bit.
- Cut your sausages into rounds about 1/2 inch in thickness and then add them back to the skillet. Season your sausage and veggie mixture.
- Now pour in your vodka sauce and parmesan cheese. Stir to combine everything.
- Place your skillet into your oven and let it cook for about 15 minutes. Once it's almost done, quickly sprinkle your mozzarella cheese so that it will melt over the top of the whole thing.
- You can eat the whole thing right out of the skillet like we did, but be careful because the skillet will remain hot for quite some time. Otherwise, use a large soup spoon or a wide spatula to divide the skillet into two helpings and enjoy with a friend!

This is amazing! I forgot to buy mushrooms but made it anyway. I also used a ceramic skillet and then simmered for a bit instead of using a cast iron (only bc I just moved and didn’t buy one yet!) I added extra cheese. Soooo good.

What kind of vodka sauce are you using that is only 4.5 carbs per quarter cup? That’s really quite low.
If I remember correctly, we used a Stop&Shop brand of sauce that’s quite low in carbs. Vodka sauce in general is lower in carbs than marinara sauces because of the cream added. Tomatoes are quite high in sugar and since vodka sauce contains less per serving, it’s a little lower in carbs.
