No Sugar Here!
We’re always looking for interesting low carb cocktails to order or make at home for friends! Our standard was a Long Island Iced Tea without all the sweeteners, but as that only left 4 different kinds of alcohol in debilitating quantities – we needed something lighter. We did some searches for cocktails with lime and club soda and came across a Lime Rickey (funnily enough, it’s the combo of our names, Rami & Vicky!)
A Lime Rickey is traditionally made with gin or bourbon and has very little sugar added to them. Sounds like our kind of cocktail! Lime is added for the hint of sweetness it gives with adding too many carbs. A medium lime has 5g of carbs, and if you use only the juice, add 4g of carbs.
To make this more palatable we added some sugar-free raspberry syrup, from Torani, which gave us some awesome flavor and beautiful color. (Torani also has sugar free syrups in all different flavors so you should definitely check them out- perfect for coffees and cocktails!) And to add our own twist, we decided to throw in some mint leaves, which we muddled at the bottom of the glass with our lime. This little touch definitely gave our tasty dink that “professional” touch!

If you don’t have a muddler, try using a mortar and pestle. If you don’t have one of those, simply squish the mint leaves and lime together using the bottom of a fork. Press the fork against the leaves and twist. Muddling is not about crushing the leaves the point of not recognizing them. You are simply looking to break them down enough to release their oils and essence. Here’s a good technique. You will also notice the difference in one sip between a cocktail that has been muddles and one that has not- a little muddling goes a long way toward adding lots of flavor!
We made four Raspberry Lime Rickeys for brunch with a shot of gin in each. Of course, you can make these as strong or as weak as you want. You can add vodka or even rum if that’s your preferred liquor. We went the traditional route, but it can be tailored to your tastes! The citrusy, coriander and juniper tastes that are inside a glass of gin really go well with the lime and raspberry though!
This is the perfect summertime cocktail that you can enjoy freely while sticking to your keto goals. It is delicious, refreshing and very flavorful. Of course it also packs a good punch when it comes to the alcohol! One drink and you’ll be feeling nice and relaxed! Enjoy.

- 16 oz club soda
- 4 oz sugar-free raspberry syrup
- 4 limes
- 6 oz gin
- 8 fresh mint leaves
- ice
- Muddle together limes and mint leaves in four tall glasses.
- Add ice and club soda and 4 oz of sugar-free raspberry syrup, such as Torani brand.
- Add in your liquor of choice, 1.5 oz (1 shot) per person served or more if desired. We used gin, but vodka can also work.
- Mix to combine and garnish with raspberries, limes and more mint leaves!

I love the rickey – my favorite is the Rosemary Rickey, and I think it will be great as soon as it starts heating up. I have an enormous rosemary bush growing on the side of my house, and I’ll use any excuse to trim off the delicious new shoots from the ends! I make a ‘simple’ syrup with truvia and the rosemary sprigs, and splash it with soda or sparkling water, because I love bubble water. add your lime juice, and viola! I like the idea of the raspberry sugar free syrup – I always see that on the Monin website, and I never think of how to use it. Thank you for that!!
When we had a rosemary plant, it grew so uncontrollably we threw the herb into anything and everything 😀 so tasty!
Can you make the lime rickies ahead of time and refrigerate? If so, how long will it keep?
Yes, I think you can make them ahead of time in a pitcher for a party! I wouldn’t keep the batch for too long. I find that citrus goes bitter quickly but I can’t say how long exactly.
