Eating out while keto is not always easy. Many restaurants will cater to us low carb folks but fast food is not as accommodating. Sure, you can remove buns from burgers and omit fries entirely, but you may end up with a lot less food and find yourself either paying double or still hungry! Can’t we low-carb eaters catch a break?! Luckily, we have Chipotle.
Chipotle is many people’s keto-friendly fallback and one of the only fast food places where you can get a truly low-carb, filling meal without waiting forever. It’s easy to skip the rice and beans and opt for the good stuff – yummy marinated meats, cheese & avocado. Sort of the low carb trifecta, don’t you think? Since you get to choose what goes into your bowl, you are in charge of your carbs!
However, Chipotle is kind of on the more expensive end of the fast food spectrum, making it a healthy treat that sometimes comes with a guilty conscience. You want that low carb goodness that goes into those bowls but you may not want to spend all that money to get the easy low carb meal. What’s a hungry keto-er to do? Make their own, of course.

With such simple ingredients, it’s hard not to make a Chipotle Steak Bowl at home every day! Once you make this recipe once, you will see how easy it is to get restaurant-worthy food at a fraction of the price. Chipotle gave us the idea and we made it accessible to everyone. No need to drive all the way to Chipotle and shell out all your money anymore!
Take this simple recipe and switch it up using chicken, pork, sausage or veggies as the base. Pick your cheese, choose your keto veggies and you can opt for the guacamole or just skip it- you can really customize it any way you’d like! It’s almost as if you were actually at Chipotle, standing in line to choose what you want to throw into your bowl, however, there is no line and you actually have more options than Chipotle could ever offer- you have everything in your keto kitchen!
Throw it into your weekly recipe rotation and feel free to pack it away for work or school. This recipe reheats really well and it is ideal for a lunchbox. You can even meal prep this recipe and make a huge batch, divide it into containers and be set for the entire week! Just grab a container in the morning and go! - 16 oz. skirt steak
- salt, pepper
- 1 homemade guacamole recipe
- 4 oz. pepper jack cheese
- 1 cup sour cream
- 1 handful fresh cilantro
- 1 splash Chipotle Tabasco Sauce
- Season the skirt steak with salt and pepper to taste and heat up a cast iron skillet on high heat. When it's very hot, cook the skirt steak for 3-4 minutes on each side. Let it rest on a plate while you prepare the guacamole.
- Prepare the guacamole according to our Homemade Guacamole recipe.
- Slice the skirt steak against the grain into thin, bite-sized strips and divide into 4 portions.
- Shred the pepper jack cheese using a cheese grater and top each portion of skirt steak.
- Add about 1/4 cup of guacamole to each portion, followed by 1/4 cup of sour cream.
- Splash each portion with Chipotle Tabasco Sauce (optional) and fresh cilantro. Enjoy!

Hi, I noticed that the serving size is “2 people” yet the recipe states “divide into 4 portions.” Is this receipt for 2 servings, with each serving containing two portions or ??? Thanks!!

I made it, seasoned the steak the night before…still didn’t taste that great. i might try a different steak next time. Was not good with the skirt steak. 😛
Skirt steak loves a good marinade! Try something with lots of olive oil and lime juice, that should soften it and give it more flavor.
As a former employee of Chipotle, I would recommend marinating the meat in adobo sauce before grilling. That’s what gives their steak its spicy flavor.
