Quick, Impressive and Low Carb
This delicious keto meal was an accident! But a happy one, for sure. We were originally planning to make some homemade, cucumber wrapped sushi. Turns out, it’s not so easy. I never fully appreciated the work and detail that goes into the art of sushi making. Chefs who dabble in the more creative side of this craft are skilled way beyond mere mortals. The smallest task of cutting a cucumber into a flat, rolled out sheet proved way too difficult for us first-timers. Back to the store we go for more practice cucumbers!
In the meantime, we decided to make a quick meal and start fresh tomorrow. Because we were excited for seafood and had so much shrimp defrosted for our rolls, we wanted to incorporate them into the meal. We took some chicken and veggies and created something yummy in a pinch- chicken and shrimp with a zesty lime spicy mayo! We added sweet, sour and spicy ingredients to make this chicken and shrimp exciting.
We served it on a fresh bed a spinach and our favorite garlic roasted mushrooms. And, as all our quick bites, this took us less than 30 minutes to make!

- 2 boneless chicken breasts
- 20 large shrimp (peeled and deveined)
- 1/2 lb mushrooms
- 2 handfuls spinach
- 1/4 cup mayonnaise
- 2 tbsp sriracha
- 1 tbsp coconut oil
- 2 tsp lime juice
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp crushed red pepper
- 1/2 tsp paprika
- 1/2 tsp So Nourished erythritol sweetener
- 1/4 tsp xanthan gum
- 1 stalk green onion
- First, it may be a good idea to tenderize your chicken breasts before cooking them, to reduce cook time. Beat the chicken breasts between two layers of plastic wrap until about 1 inch to an inch and a half in thickness.
- Place the breasts on a large oiled pan on medium-high heat and season with salt and garlic powder. Let them cook about 8 minutes until flipping. Reduce heat and cover when flipped onto other side.
- While the chicken is cooking, slice your mushrooms and throw them into the same pan around the chicken. Season with salt and garlic powder as well. Make sure to add more oil if needed, mushrooms soak up a lot of oil while cooking.
- In a different pan, we're going to cook the shrimp in our sweet and spicy sauce. Defrost, peel and devein your shrimp if not already purchased that way.
- Have your sauces ready to go when cooking shrimp. The shrimp cook very quickly and if left on a flame too long, they become tough. Combine the mayo, sriracha, erythritol and xanthan gum. Whisk quickly and thoroughly.
- Heat the pan on a medium heat and put the shrimp on in an even layer. Working quickly, combine the shrimp and your sweet and spicy sauce and toss to completely coat each piece. Let cook for about 3 minutes, stirring often. All the shrimp should be completely pink and the sauce slightly thickened but not simmering.
- When the shrimp are done cooking, turn off the flame and remove from heat. Add the lime juice and toss again.
- Prepare a bed of spinach and add the cooked mushrooms to it.
- When the chicken is done, place it onto the bed of spinach and top with as many shrimp as you'd like. Pour some extra sauce onto the whole dish too!
- Garnish with some green onion and lime wedges. Enjoy!

When do the paprika and crushed red pepper come in? I’m assuming they should be part of the shrimp sauce?
Yes, add them in with all the sauce ingredients!
