Two flavors, one keto fat bomb.
Yes, you read that right, white chocolate on a low carb diet!
After a recent purchase of cocoa butter, I was itching to play with it. It smelled amazing! But tasting it right out of the bag (it came delivered in block form in a plastic baggy) reminded me of tasteless wax. I was a little skeptical and wondered how much sweetener I’d have to add for it to taste like the low carb white chocolate I’d been reading it would. Turns out, not much! A little bit of erythritol is all it takes! After playing around with a basic recipe for low carb “white chocolate” I decided to mix in some flavors and make some fat bombs out of this new ingredient. Enter butter pecan. Who knew this ice cream flavor was so keto-friendly? Minus the sugary ice cream, of course.
Fat bombs are popular in the keto community and are handy boosts of fat. They’re usually sweet mixes of coconut oil, cream cheese, butter, sweetener and/or cocoa. Savory ones do exist though! Fat bombs are used throughout the day (if you’re busy and didn’t have time for lunch) and deliver the fat you may be missing. They are usually very high in fat (80-90% fat) with some protein and very little carbs. You can easily make some fat bombs using just coconut oil, peanut butter, cocoa powder, and sweetener by melting them all together and freezing in ice cube trays or cupcake molds, or you can get a little fancier with Coconut Butter Cups! The varieties are endless and they’re fun to eat!

This variation is a little more complex, but the flavor you get is out of this world! I like to enjoy 1 or 2 with tea at the end of my day and they are an amazing treat. One key to this recipe is to use powdered erythritol which melts easily into the cocoa butter. If you only have granular erythritol on hand, you can still make it work but the fat bombs may have a slightly grainy texture. While I’m obsessed with the butter pecan flavor of these fat bombs, you can definitely use a different kind of nut to make the recipe a little differently. Chopped almonds or walnuts will both work wonderfully. Hazelnuts are another decadent option. No matter what kind of nut you choose, you are going to love these fat bombs especially if you have been craving white chocolate yet trying to stick to your keto diet. Now onto our fat bomb recipe!
Servings: fat bombs |
- 2 tbsp coconut oil
- 2 tbsp butter
- 2 oz cocoa butter
- 2 tbsp So Nourished powdered erythritol sweetener
- 1/4 tsp vanilla extract
- 1 pinch Stevia
- 1 pinch salt
- 1/2 cup chopped pecans
- Melt coconut oil, cocoa butter and butter together in a small pan until melted. Then turn the heat off.
- If you don't have powdered erythritol, you can easily make it. Place erythritol in a NutriBullet or small blender and pulse until powdery! Stir in 2 tablespoons of it into the butter mixture until combined.
- Add a pinch of salt to bring out the sweetness.
- Add in an optional pinch of Stevia. Some people say it counteracts the cooling effects of erythritol.
- Add in vanilla extract.
- Into some silicone cupcake molds or candy molds, add a few chopped pecans. I added about 3-4 pecans total to each mold, but this can be altered. If you don't have pecans, walnuts and hazelnuts work well with white chocolate too!
- Pour your white chocolate mix evenly into the molds over the nuts and place in freezer immediately.
- Freeze for about 30 minutes. You want them to be nice and cool when eating as they melt easily.
- Enjoy!

I have stevia/erythritol blend will that work the same and how about the carbs will it increase the total?
The net carbs won’t increase so you can use it!
My ingredients seperated not sure why but before pouring i had to keep stirring to blend properly. I powdered my erythritol then added it per the instructuions above but it did not blend in well?
That sometimes happens when the ingredients are heated too much. The solution is to keep stirring once the batch is cooling. The cooler it gets, the thicker – and that makes it easier to mix it into an even mixture.

Hi, I’m just wondering how important the butter is in the recipe? Can I just increase the amount of cacao or split the difference between the coconut oil and cacao butter? TIA
The butter is pretty important for the taste, but if you’d like to use coconut oil and cocoa butter, the consistency should stay the same! Go for it and let us know how they turn out.

Fat bombs are snacks that are very high in fat and low in carbs.
Typically, a person would enjoy a fat bomb when they need an extra boost in fat during the day. Many people aim for 75% of their calories from fat. If you’re having trouble getting enough fat in during the day, fat bombs are a good boost!
And if you like sweets, fat bombs are a good low carb alternative to a sugary snack. They’re good to keep around in case you want something to indulge in but don’t want the extra carbs.

My nutrition calculator is giving me double the amount of calories per serving and I can’t figure out why. I’m using Lose It! and it inputs each ingredient individually, then does all the math. Can you help?
He Casey, we use My Fitness Pal to calculate our macros. There may be an inconsistency between pecan or cocoa butter brands but otherwise, you should get a similar number.
Also, we don’t calculate erythritol into our macros since we count net carbs.

Yes, this recipe makes 4 fat bombs but you can change the amount by writing an 8, for example, in the recipe where it says “4 Servings” and the recipe will update to reflect the new amount.
The entire recipe has 1 carb!

Do you think this would work with leaving out the erythritol completely? I only use stevia for a sweetener as any of those chemical things upset my digestive tract.
I think stevia would work well with this. The fat bombs might turn out a bit smaller though since you’re losing so much bulk from the erythritol.

Hey Sarah! Each fat bomb is 287 calories. They’re quite big, I wish I had a few left to weigh them out for you. They were about the size of Reese’s cups, maybe a little taller. Hope this helps!
So I just made this after wanting too for ages, and the pan of oil exploded on me. So either I had the oil too hot or you didn’t actually add vanilla even though it has it in the recipe?
So, if anyone makes this, if you add vanilla let it cool first! Exploding oil at 3am was startling!
Definitely too hot! We heated the oil and cocoa butter just until melted. Then took our time powdering the erythritol and all the other steps until the end. I’ll update the recipe to say all that. Thanks for letting us know!

I ordered the erythritol you linked to and it has 4 carbs per Teaspoon- wondering how each fat bomb has .25 grams of carbs when there are 2 Tablespoons in the recipe ? Also couldn’t get the erythritol to dissolve. They’re in he freezer now- hope they’re tasty!
Hey Charlie! The erythritol is listed under carbs but is labeled a “sugar alcohol”. Our body doesn’t digest sugar alcohols (much like fiber) and they are passed through without any effects on blood sugar. For this reason, we subtract the 4g from the carb count, since we don’t use them!
As for dissolving, try adding the erythritol to the coconut oil while it’s still on a low flame. The heat will help it dissolve. Otherwise, pulsing the erythritol to make it powdered will help it dissolve more easily.
