Amazing Keto Egg Salad
I love egg salad. It is one of my favorite keto recipes that I just can’t get enough of. I eat it straight out of a bowl for breakfast, I put it in a keto wrap for lunch and sometimes I make oopsie rolls and pile egg salad on top of those for dinner. It is a perfect, anytime food.
Egg salad is also great for preparing ahead of time. You can make a huge batch and keep it in the fridge for about a week. For those of you who love to meal prep, egg salad is a perfect food to divide into separate meal prep containers and grab on your way to work each day. Throw it in a lettuce leaf the night before and you have a nice wrap that you can eat in the car. I could go on and on about the wonders of egg salad….

However, no matter how great egg salad is, there are definitely times when I get a little tired of eating the same thing. You really can only eat so much egg salad. But what you can do is switch up your egg salad and make it new and exciting. If this sounds like something you’d want to do, then let me introduce you to the only ingredient you need to make your egg salad even more delicious: the avocado.
Avocados are an essential keto ingredient that you absolutely have to have on hand all the time. They are packed with healthy fats, they taste great and they go well in so many different foods. You can toss an avocado into a smoothie or you can eat it with some keto chips. You can also pop it right into your egg salad.
This recipe uses ripe avocados to replace the mayonnaise that you may usually use in your egg salad. All those healthy avocado fats are the perfect substitute for mayonnaise and, since lots of store-bought mayo is made with bad saturated fats, avocado is a more nutritious option as well. The texture of a ripe avocado is even the same as the texture of mayonnaise! It is clearly a great substitute and will add a lot to your egg salad. Of course, be aware that adding avocado will turn your egg salad green! Nothing wrong with green food though.
Our avocado egg salad recipe calls for butter lettuce leaves so that you can wrap the egg salad up and eat it easily when you are on the go. You can definitely skip the lettuce wraps if you’d like and eat the egg salad your favorite way- so many options! I also strongly recommend adding some cayenne pepper or some chili powder to the mix to create a spicy egg salad. Just another way to switch it up and spice up your egg salad routine- literally!

- 6 eggs, hard boiled
- 2 avocados, ripe
- 2 tbsp lemon juice
- 1/4 cup minced chives
- 1/2 tsp minced dill
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 6 butter lettuce leaves
- Peel the hard boiled eggs and chop them roughly. Place in a large mixing bowl.
- Peel the ripe avocados and remove the pit. Chop roughly and place in the bowl with the eggs. Mix the two ingredients together, smashing them to your desired consistency (the more you mix them, the smoother your egg salad will be).
- Add the lemon juice, chives, dill, salt and pepper to your bowl and stir well.
- Scoop the egg salad onto the butter lettuce leaves and serve immediately.
