Breakfast for Lunch!
We all know having breakfast for dinner is amazing… but breakfast for lunch isn’t as common. Cobb salad has always given us breakfast vibes when we enjoy it for lunch! It’s not surprising – you’ve got bacon, egg and avocado in one meal! That’s our usual weekday breakfast with a few more ingredients thrown in. It really is like a breakfast placed on top of a bed of lettuce. But hey, we aren’t complaining- it’s a pretty great invention.
A Cobb salad is already a pretty safe low carb lunch option. The only thing to watch out for is some dressings that can be full of sugar. Otherwise, the salad’s full of fat! All that avocado, egg and bacon makes our Cobb salad recipe extremely filling! Since it is packed with so many toppings, it is a really complex salad with lots of flavors loaded into each bite. This isn’t your regular old garden salad! It really is a complete meal in a bowl.
Cobb salad is a great option for taking to work or school with you as your first meal of the day if you’re fasting (Have you heard of intermittent fasting?) or enjoying at home (for breakfast, lunch or dinner)! The salad holds up pretty well for several hours after you make it and you can easily get away without refrigerating it if you need to. We do recommend making the cobb salad the say you are going to eat it though as the avocado will brown quickly.

If you do want to make parts of this salad in advance, you can always hard boil a few eggs and saute up lots of bacon and keep in it your fridge at home. Whenever you want a salad, you will have these ingredients ready to go! It will definitely help cut back on prep time when you make your salad in the morning.

- 1 cup spinach
- 1 hard boiled egg
- 2 strips bacon
- 2 oz. chicken breast
- 1/2 campari tomato
- 1/4 avocado
- 1/2 tsp white vinegar
- 1 tbsp olive oil
- Cook your bacon and chicken if they are not yet cooked. Shred your chicken or slice it any way you prefer.
- Chop up all your ingredients into bite sized pieces.
- Combine them in a large mixing bowl with your oil and vinegar (you can also use a low carb bleu cheese dressing!).
- Toss well and enjoy!
